Easy Pepper Steak – A 20 Minute Meal

Sunday is supposed to be a day of rest right?  Perhaps that is why many Sunday evenings I don’t feel like cooking.  Can you relate?

Well since I am the only one in the household that really cooks (I am working to teach my older girls), I have to get something on the table.  While I confess there are some Sundays when we do order pizza, most times I will pull a fast and easy cooking recipe out of my cooking arsenal.

This recipe for Easy Pepper Steak definitely fits the bill and has been one of my family’s favorites for over 10 years.  To make it even better, the protein is one that often goes on BOGO sales at most grocery stores.  That is round steak.  The majority of my round steak recipes are for the crockpot, but that wouldn’t be quick right??

So Easy Pepper Steak is a stove top skillet recipe and you only need 5 ingredients.  Sounds easy right?

Easy Pepper Steak Ingredients

  • 1 1/2 lbs Round Steak
  • Garlic Powder
  • Soy Sauce
  • 1 tsp honey or sugar
  • Bell Peppers (Green, Red, Yellow, Orange) – whatever is on sale works

As you can see in the above picture, the meat came right from my freezer. I defrosted it in my microwave only enough to make it easy to cut into strips. Put the meat in the pan and sprinkle with garlic powder to your desired taste. Since my kids aren’t crazy about garlic, I go light on it.

Cook on medium high heat until browned and then pour soy sauce over your meat until it is coated.

Add in the honey (or sugar), stir  and put a cover on your pan. Cook over low heat for 5 minutes.

Here’s what my beef looked like after 5 minutes .

Add your cubed  peppers and cook to desired consistency.  Since I was cooking for 7, I used 4 1/2 peppers, but years ago when the kids were much smaller, I only used 2 peppers.  The great thing about this recipe, is you can easily tailor it for both the size of the party you are feeding and the exact taste you are looking for.

I served my Easy Pepper steak with brown rice that I cooked in my rice cooker.  I love that the rice cooker doesn’t require any babysitting and the rice gets done in the same amount of time as cooking it on the stovet top.  It was definitely $20 well spent, especially since I can steam my veggies at the same time if necessary.
