Kidney Bean Broccoli Salad | Meatless Monday Meal


While we aren’t vegetarians, I try to incorporate some meatless meal recipes into our diet every so often.  Not only is this actually beneficial for our health (since health experts say to limit red meat), but it also helps the food budget.  In the case of this recipe, it was also a time saver because I didn’t have to defrost any meat and also kept my kitchen cool since no actual cooking was involved.

I made this on a night that I really didn’t feel like taking the time to defrost meat in the microwave.  I checked my freezer and saw bags of Hanover Kidney Beans that I had picked up free several weeks ago Giant Eagle.  I also knew I wanted to use some of  the broccoli  I had picked up on my last trip to Aldis.  With that it mind I checked my favorite recipe site Yummly and put in Kidney Beans and Broccoli.

It came up with more recipes then I could imagine for this combination, but Martha’s Broccoli Salad caught my attention because it included cucumbers which I had also just stocked up on at Aldis.

It served as a great inspiration for my version of Kidney Bean Broccoli Salad.

Meatless Meal Recipe | Kidney Bean Broccoli Salad

Frugal Vegetarian Meal using Kidney Beans and Broccoli

Salad Ingredients
  • 2 Bags Hanover Frozen Kidney Beans
  • 3 Heads Broccoli (cut into bite sizes)
  • 2½ Cucumbers (cut into bite sizes)
  • ¾ - 1 Cup Cheddar Cheese
  • ¾ - 1 Cup Mozzarella Cheese
  • 1-2 TSBP Dill Weed
  • ¼ to ½ Cup Hemp Hearts (Costco is a Great Place to get these)
Dressing Ingredients
  • ¼ cup Red Wine Vinegar
  • ¼ to ½ Cup Honey
  • ⅔ Cup Mayo
  • 2 tsp pepper
  • 1 tsp Salt
  • 3 - 4 TBSP Lemon Juice
  • Sunflower Seeds
  • Several Sprigs of Fresh Dill
  1. Defrost beans in microwave by cooking on high for about 5 minutes.
  2. Mix all Salad Ingredents together in a bowl.
  3. In seperate bowl whisk together dressing ingedients until it is smooth.
  4. Pour into Salad and stir together.
  5. Can refrigerate overnight or serve immediately
  6. Top with Sunflower Seeds and Sprigs of dill.
