Simple Stuffed Peppers | A Crock pot Tuesday Recipe


Today’s Crockpot Tuesday recipe is Simple Stuffed peppers.

Many frugal bloggers do a lot of freezer cooking.  I have tried it in the past and it just didn’t work well for me.  That’s with the exception of one item.  That item is browned hamburger.

I buy hamburger in bulk 3 pound plus packages. For a meal I usually use 1 1/2 to 2 pounds.  Instead of freezing the other half raw, I brown it as well and freeze or refrigerate that.  When I brown the meat I add minced garlic and onion.  This makes for an easy meal when it’s time to prepare a hamburger meal.



Pre-Browned and flavored hamburger along with some tomatoes from the stockpile is what made this Slow Cooker Stuffed Pepper meal super simple.  Here’s the printable recipe for you.

Serves: 6
  • 1½ lbs ground beef - browned with minced garlic and onion to desired taste
  • 3 Green Peppers
  • 28 oz can Diced Tomatoes with Garlic, Basil and Oregano
  • 1 slice bread
  • 1 egg
  1. Cut Peppers in half and remove seeds.
  2. Mix Ground beef, egg and bread torn into small pieces.
  3. Stuff Ground beef mixture into peppers.
  4. Pour Diced Tomatoes on top of the Peppers.
  5. Cook on Low 6 hours or High 3 to 4 hours
  6. Sprinke with Cheddar Cheese at serving time
