School started today and I don’t know about you, but in our house that means a crazy afternoon schedule.  It also means getting dinner on the table on time can be frustrating.

On really crazy days (even if it isn’t Monday), I often find mind myself making meatless meals.  That’s because they are usually pretty fast since canned beans are faster to cook then meat in most cases.  Not only that, but they are frugal too.

Today’s recipe of Black Bean Quesadillas uses four of my top 12 items from Aldi

 

  • Tortilla Wraps
  • Block Cheddar Cheese
  • Black Beans
  • Spices

 

By adding the black beans – and a couple extra stockpile surprises – to the quesadillas, it was definitely much more filling then your basic cheese quesadilla, and perfect for a dinner.  My meat loving husband didn’t even complain about going vegetarian for the day.

To make it even more interesting, the recipe was jazzed up a bit more by adding some spice to the recipe.   That’s because this isn’t your normal Black Bean Quesadilla.  It’s actually Sweet and Spicy Black Bean Quesadillas!
