Gluten Free Pumpkin Pancakes with White Chocolate | A Recipe from My Stockpile

Gluten-Free-Pumpkin-Pancakes I have another stockpile recipe for you today.`  It’s even Gluten Free.`  The recipe is Pumpkin Pancakes with White Chocolate Morsels.`  If you want to make it sugar free, you can just leave out the chocolate and it’s still very tasty. pumpkin-pancakes-ingredients Similar to the last couple stockpile recipes I shared, this one gets a bunch of flavor from dried spices. This recipe was inspired by a recipe I found in The 21 Day Sugar Detox.`  Of course, by adding the chocolate morsels mine wasn’t a total sugar detox.`  In addition, I served the pancakes with pure maple syrup that also isn’t sugar free.`  Here’s the recipe I used:

Have a Healthy breakfast with a bit of a treat with these Gluten Free Pumpkin Pancakes with white Chocolate. Plus it's Gluten Free
Serves: 10 pancakes
  • 6 Eggs
  • ¾ cup canned pumpkin
  • 1½ tsp pure vanilla extract
  • 2¼ tsp cinnamon
  • ⅜ tsp nutmeg
  • ⅜ tsp ground ginger
  • 3/16 tsp ground cloves (a little under ¼ tsp)
  • pinch of sea salt
  • ⅜ tsp baking soda
  • 3 TBSP Coconut Flour
  • Handful of Nestle White Chocolate Morsels
  • coconut oil to grease pan
  1. In food processor combine all the ingredients except the coconut oil and chocolate and pulse until well mixed. You can also mix by hand, just sift all dry ingredients iafter mixing together wet ingredients.
  2. Stir in the chocolate morsels
  3. Grease skillet with coconut oil
  4. Spoon batter onto skillet to desired pancake size. The batter is a bit stickly so you will have to push it down a bit.
  5. Cook for about 3 minutes a side.
  6. Serve with pure Maple Syrup
I made these the night before, stored in the refrigerator and warmed them up in the microwave. ` Next time I’m going to try adding some Chia seed.
