Revisiting the very first Crockpot Tuesday recipe I shared on The Coupon “High.” ` After many more recipes it is still a go-to and one that’s very loved. ` Although food prices (especially meat) have risen quite drastically over the past 5 years, Pork has remained pretty frugal and can still be picked up on sale for about $1.88 per pount.

So here’s my original Crockpot Tuesday recipe.

I love my crockpot especially on busy days. Tuesday is a very day at my house, and if it weren’t for the crockpot we would either be eating fast food (which is very expensive) or eating at 8:00 (which is my kid’s bedtime.) ` But with the crockpot I get a healthy meal that cooks while I’m busy or away. Another big plus to the crockpot is that the recipes are usually pretty inexpensive.

Tonights dinner was Taco Salad made with Pork. It was super easy and my husband even gave it a thumbs up!
At about 10:30 this morning, I took 2 pounds of porkloin out of freezer. I buy the whole porkloins when they are on sale for $1.77/lb and I have the butcher cut it into chops. When I get home from the store, I separate it into meal sizes and put them in ziploc bags and freeze them.

I put the frozen porkloin in the crockpot and put 1/4 cup of Taco seasoning and 2/3 cup water on top and turned the crockpot on low. I didn’t touch it again until 5 pm. You could also use a packet of taco mix. I only use these when I can get them for free with coupons. Otherwise I buy the big bottle of Taco Seasoning at Sams for about $4.

At 5 pm I took two forks and shredded the pork and let it sit in the juices for the next hour and half on warm.

When I got home at 6:30, I shredded up 1 Romaine Heart (which I bought at Sam’s for 1/2 the price of the grocery store.) I added half a bag of crushed Doritos, then put the meat in the bowl, and topped with shredded cheese that I got for cheap at Target, and stirred it up. Some of my family added Italian dressing (which I got for 16 cents a bottle.)

So the estimated cost of the dish that fed 6 is $6.10.
Pork – $3.50 for 2 lbs
Taco Seasoning – 25 cents
Romaine – 50 cents
Cheese $1.00
Doritos – 85 cents

Frugal Taco Salad made with Pork in your Crockpot.
Ingredients
  • 2 lb Pork Tenderloin
  • ¼ cup Taco Seasoning or 1 Packet
  • ⅔ cup Water
  • 2 Romaine Hearts
  • ½ bag Doritos
  • Shredded Cheese
  • Other Taco Topping of your Choice - I add Italian Salad Dressing
Instructions
  1. Place Pork (mine was frozen), Taco Seasoning and Water in crockpot and turn on low.
  2. Cook for 6 to 7 hours.
  3. Shred the Pork with forks and let it sit in fluid until ready to serve - at least 30 minutes.
  4. Mix Shredded Pork with Taco Salad fixings and serve.
This is basically the cost for 1 person at a fast food place and so much healthier.
