It’s Election Day and perhaps you would like to be watching the results come in instead of cooking dinner and washing the pots. Or maybe, you just want a really simple supper dish.
The second is what inspired me to make Chicken Pizza in the Crock Pot. I am always looking for new crock pot recipes, so on my most recent trip to the library I grabbed a cookbook called 5 Ingredients or Less Slow Cooker Cookbook. The recipe in the book that caught my attention for dinner (since chicken was the protein of choice that night) was Pepperoni Pizza Chicken.
Not only did this recipe fit the bill for the protein source, but it was also going to use two ingredients that would be going bad if I didn’t use them soon (Italian Bread and Mushrooms.) Since this is one of the main ways I feed my family frugally without meal planning it definitely fit the bill.
Well, I ran into a slight problem. I didn’t have any pizza sauce, but that wasn’t going to deter me. I knew I could use ingredient substitutes. Those substitutes led this not fit the title of the cookbook. Instead of 5 ingredients, I ended up using 8.
Still it ended up yummy and a meal that went over well with the whole family.

Can you figure out what my substitute was for the Pizza Sauce?
It was Crushed Tomatoes with Aldi spices including Oregano, Garlic Powder and Basil.
I mentioned that this meal was super simple. You don’t even have to defrost the meat. It’s simply a drop and cook meal.
I’m not sure if you can see it, but chicken is on the bottom and then I topped it with sliced mushrooms and diced pepperonis. Next, I poured the crushed tomatoes in and sprinkled on the spices.
I did then take the time to stir the sauce and spices together.
Before turning on the crock pot, I sprinkled it all with cheese.
Since my meat was frozen, I turned my crock pot onto high for 2 hours and then continued cooking on low for 7 hours. If you are rushed for time, you can cook it on high for 5 hours.

Since we aren’t gluten free and my family loves carbs, I served up the Chicken Pizza (which actually was a bit more like a stew) up with the Italian Bread. Of course, you could leave this part out.
So that’s it. A super simple and delicious crock pot recipe for you. As an added bonus, and one that made my daughter very happy, there is only the one pot to wash!

- 2½ pounds Boneless Skinless Chicken Breast
- 28 oz can Crushed Tomatoes
- 1½ tsp Oregano
- 1½ tsp Basil
- 1 tsp Garlic
- ½ package sliced pepperoni (diced)
- 8 oz Mushrooms (sliced)
- 2 cups Mozzarella Cheese
- Italian Bread (for serving)
- Place the chicken in the crock pot. You don't need to defrost it.
- Top with Mushrooms and Pepperoni
- Pour on Crushed Tomatoes and add in spices. Then stir the sauce and spices together.
- Sprinkle on the cheese
- Turn on high and cook for 2 hours and then turn to low for 7 hours OR Cook on High for 5 hours. If your chicken is defrosted remove one hour of "HIGH" cooking time.
- Serve with Italian Bread and a bit of extra cheese to top.
